Mexican Bean Dip Extravaganza

Didn’t check my email yesterday-getting ready  to go now so I don’t have time to look up recipes but off the top of my head….Take a can of veggie chili and lite cream cheese (8oz) heat together until cheese is melted. Voila-chili cheese dip!! Serve with baked chips. Or soften 8 oz cream cheese, spread in 11×7 pan (or on a dinner plate or an 8×8 or a 9x9pan), next layer ff refried beans, then some mashed avocado or guacamole, then sour cream, then lettuce, then some chopped tomato, then a bit of green onion. Surprise layered Mexican bean dip!! to make the beans a bit easier to spread, heat them slightly and mix a couple spoons of salsa in them. You can also put some salsa on top of the sour cream layer then the rest of the stuff. Be sure its a thick salsa though.

Got the Spinach Artichoke Dip Munchies

Me: Mom, can you send me that recipe for spinach artichoke dip? I’m going to make it to bring to Matt’s house tonight.

Boy Cookies vs. Girl Cookies

Sift dry ingred together and add to mixture. This is the place where spoons don’t work. I have to get in there with my hands to incorporate the last of the flour. It makes the cookie taller and less greasy. This is also the place to add nuts if you like boy cookies (1 cup chopped pecans). I prefer girl cookies (no nuts).

ULTIMATE PARTY (meatballs)

I was on the oceanspray.com/recipes website to look for an appetizer meatball recipe which I had seen in a magazine and I thought it looked good.

It’s called Ultimate party meatballs

2 1-pound bags of frozen pre-cooked cocktail-size meatballs (about64)
1 16-oonce can Ocean Spray jellied cranberry sauce
1 12- ounce bottle Heinz Chili sauce.

Combine cranberry sauce and chili sauce in a saucepan. Cook over medium heat stirring until smooth.
Add meatballs, stir gently to coat. Cook 12-15 minutes. Place in slow cooker to keep warm.

Just Throw it in the Bird’s Ass and Bake the Bastard

for the meat stuffing:  You are probably going to wantthree ponds of ground pork.  if you can find common crackers down there….that is what the recipe calls for, but i usually use oyster crackers or even saltines works fine.  just saute the pork with a large or two med onions and crush about a sleeve of crackers (if you use the other kind just judge it about the same amount.  don’t drain the fat from the pork b/c you want it to absorb into the crackers when you add them. (cut the onions very fine too) i usually chop mine or grate them.  while it is simmering just add bells seasoning and salt and pepper to taste.  i would say with 3 lbs you will use at least half a box..but taste it when you add it and just do it the way you like it.  then just thow it in the birds ass and bake the bastard!!!

FANTABULOUS Treats

How were the cupcakes?  I have a GREAT treat idea for you.  It is FANTABULOUS and you I could make it for tomorrow.  I think I will make some tonight.  There really is no assembly – all you do is put it together and pop it in the microwave…

Snyder Butter Snap pretzels, placed on a cookie sheet, Rollo’s or Hershey Kiss on top, warm in the oven, take out and top with an almond/peanut M&M – possibly yellow and purple…THEY ARE FANTASTIC!

Now that I look at the subject line above, that word could also be some kind of plumber’s joke, but it is the name of a dessert…… so I guess it is an addictive dessert.
Found it while thumbing through cookbook at slow open house, and meant to share it with you earlier; I’m afraid to make it!

BUTTERCRACK
Oven at 325
Crust:
3/4 stick butter, melted
1 Box Butter Receipe Cake Mix
2 Eggs
Mix crust ingredients by hand until well blended. Batter will be very thick. Press into well greased 9x 13 pan.

Filling:
3/4 stick butter, melted
1 Box Powdered Sugar
1 8oz pkg. Cream Cheese
2 Eggs
Blend filling ingredients with mixer until smooth. Pour over unbaked crust. Bake 55 min. @ 325 or until light golden brown. Cool completely and serve.

Dearest Peepers:
This recipe is one of the family recipes, like the old-fashioned sugar cream pie, that can never be revealed to anyone else. Sorry but it is a rule. We will have to kill you if you divulge it and trust me, it will be an ugly death… Now on to the recipe…….

Jessica Simpson’s Salad

Hi Punkin,

I heard this yesterday on the radio that she eats this everyday while she is trying to loose weight.

2 chopped Asian pears
10 sliced strawberries
1 cup of grilled chicken breast cut into strips
10 romaine lettuce leaves, chopped
small handful of croutons

Mix them with a dressing made up of 2 tbsp olive oil, 1 tbsp balsamic vinegar, 1 egg yolk & 1 tsp dijon mustard, with salt & pepper to taste.

Sounds good except for the egg yolk. I think I will make this without the egg yolk.

If you want to try I will get you olive oil, balsamic vegar and dijon mustard. The rest you would need to get. I could buy you croutons.
I think it would be kinda fun to make my own croutons. What do u think?
